YUM....

I found this recipe in Women's Health magazine, and tried it on the fam.  It was a HUGE hit!  So, I thought I'd share:

Stuffed Cinnamon French Toast:
2 Tbsp part-skim ricotta cheese
2 slices whole grain bread
1 tsp honey
Pinch + 1/2 tsp ground cinnamon
1/2 Tbsp slided almonds
1 egg
1 Tbsp 1% milk

How to make it:
Spread ricotta on bread.  Drizzle with honey and sprinkle with a pinch of cinnamon.  Top with sliced almonds (which I didn't do since I didn't have almonds handy) and other slice of bread.  Whisk together egg, milk, and 1/2 teaspoon cinnamon (I used more than 1/2 a tsp because I love cinnamon).  Coat sandwich in egg mixture and cook over medium heat on a nonstick griddle until the bread is lightly browned on both sides and cheese is melted.  Serve with powdered sugar if desired (I didn't do this since I forgot this part!).

Makes 1 serving.  Per seving:  340 cal, 14g fat (2g sat), 41 g cabs, 390 mg sodium, 8g fiber, 17 g protein. 

It was delish!  It kind of tasted like a blintz - YUM!!
